Recipe: Savory Cabbage Miso “Steak”

Servings: 2–3. Prep: 10 min | Cook: 25 min


Ingredients

1 small/medium green cabbage (cut into thick wedges, core intact)

2 tbsp miso paste (white or yellow)

1 tbsp soy sauce or tamari (gluten free)

1 tbsp sesame oil

1 clove garlic, minced

1 tsp grated ginger (optional)

Optional Garnish: sesame seeds and chopped green onions


Instructions

  1. Preheat oven: 400°F (200°C) and line a baking sheet with parchment paper.

  2. Prep cabbage: Cut cabbage into thick wedges, keeping the core intact.

  3. Make miso glaze: Mix miso paste, soy sauce, sesame oil, garlic, and ginger in a small bowl until smooth.

  4. Coat cabbage: Brush both sides of the wedges generously with the miso mixture.

  5. Roast: Bake 20–25 minutes, flipping halfway, until edges are caramelized and the cabbage is tender.

  6. Serve: Garnish with sesame seeds and green onions.
