Recipe: Baked Salmon with Lemon, Garlic, & Herb Crust

This herb-crusted baked salmon is inspired by My Natural Family. The salmon is delicious, light & flaky, and only takes 10 minutes to cook.

Total Time: 20 minutes

Yield: 4 servings


Ingredients

  • 3oz ghee or vegan butter

  • 1 tsp salt

  • 1 lemon, juiced & zested

  • 1 tbsp fresh parsley, chopped

  • 1 tsp fresh dill, chopped

  • 1 clove garlic, minced

  • 4 4.5oz salmon fillets


Instructions

  1. Preheat oven to 400°F.

  2. Place all ingredients except for salmon in a small bowl & melt in the microwave for 30-45 seconds.

  3. Stir until combined.

  4. Place the salmon fillets on a baking sheet lined with parchment paper.

  5. Using a pastry brush, coat the salmon with the lemon herb butter, evenly spreading it over the top of each fillet.

  6. Bake, uncovered, on the top or second rack for 10-12 minutes, or until the salmon is cooked through & flakes easily with a fork. (145°F)

  7. Alternatively, the fish can be broiled on medium/high on the second to top rack for 8-10 minutes, or until cooked through. This method will give you a bit more crunch, caramelized crust. (Place it directly on the pan or use tin foil. Do not use parchment paper for this method.)

  8. Serve & enjoy!
