Spring is here and I am ready to eat fresh, organic greens! Kale is one of the healthiest greens you can eat. It is full of vitamins and minerals, and it’s easy to prepare. Here is one of my favorite recipes for kale.
What you’ll need:
2-4 tbs. extra virgin olive oil
1 bunch of kale, chopped
2-4 cloves garlic, minced
¼ cup walnuts, chopped or whole
1-3 tbs. Braggs amino acids (or low sodium soy sauce)
Juice from ¼ of lemon
Optional: Tahini sauce (add before eating)
Place olive oil and chopped garlic in pan, cook for 2- 3 minutes, add chopped kale, walnuts and amino acids, cover and steam for approximately 5- 15 minutes. Before serving, squeeze fresh lemon juice on kale and enjoy. Variations: Add tahini sauce before eating.
